Curry Powder

 

I like to make mine on the sweet yet pungent smelling side. I make it by eye and by smell. I can only give approximate amounts here. All ingredients are bought ground but fresh.

I start with the turmeric, cumin, coriander and fenugreek. I use a lot of each.

I add a slight bit of cinnamon and fennel.

Mix and stir very well and smell to see how you like it. Add extra of anything you feel like more of.

Optionally,
-A bit of black pepper goes well in this.
-Cayenne can be added for however much heat you like.
-I'm not a big fan of cardamon, but I'm sure it would be a nice addition for those people who do like it.
