Corn Cheese and Bean Casserole
Ingredients:
PART 1
1 Onion, chopped
2 Garlic cloves, chopped
2 Sweet peppers, chopped
2 tb Olive oil
PART 2
1 1/2 c Corn
3/4 c Celery, chopped
1 c Tomatoes, chopped
5 sl Ww toast, diced, Dimpflmeier or other heavy bread.
1 ts Salt
1 T Sugar
3/4 ts Cayenne
1 T Basil
1 1/3 c Cheddar, mild, grated
25 oz (or less) can beans-drained

Directions:
Saute Part 1.
In a bowl, mix the saute with Part 2.
Oil a large casserole, and put the above mix into it. Bake at 350
for 40
minutes.
